Preparation steps

Preheat the oven to 200 ° C top / bottom heat. Line the baking sheet with parchment paper.

For the vegetables, peel the sweet potato and cut into narrow sticks. Clean the broccoli and cut into florets. Clean mushrooms.

For the pickled cucumbers, halve the cucumber, scrape out the inner core with a spoon and cut the cucumber into crescents. Mix rice vinegar, mirin, sugar, salt and pepper in a bowl. Mix in the cucumber and leave to marinate.

For the fried eggs, lightly moisten the bottom of a non-stick pan with oil, heat over medium heat and beat in the eggs. Reduce the heat, fry for about 1 minute and season with salt. Deglaze with soy sauce and cook for another minute.

Arrange rice together with vegetables in bowls and top with a fried egg each.
