Quinoa salad with herring and herb pesto


An extra serving Proteins after work, Sorry! Thanks to colorful quinoa and juicy Apple herring fillets there is even a whole bowl of salad here. With spicy dressing homemade herb pesto are you doing your colorful Quinoa salad with herring, Feta and Co. for pure after-work enjoyment.

Preparation steps

For the Quinoa salad cook according to the package instructions and let cool.

For the pesto, roughly chop walnuts, grate pecorino, peel and roughly chop garlic. Pluck parsley and basil from the stems. Mix everything together with spinach, olive oil, maple syrup and lime juice with a mixer or food processor to a fine pesto and season with salt and pepper. Mix with 3-4 tablespoons of water to a homogeneous dressing.

For the salad, clean the radishes and cut them into slices. Wash and halve tomatoes. Core the paprika and dice finely. Wash baby spinach and parsley, chop parsley. Mix everything together with quinoa in a bowl. Crumble the feta over it and stir in.

Drizzle dressing over salad and spread on plates.

To garnish, cut spring onions into rings and roughly chop walnuts. Drain the herring fillets and collect the oil. Dice the red onion very finely and mix with the oil. Roughly cut the herring fillets and spread over the salad. Drizzle onions with oil and top everything with spring onions and walnuts.
